Pumpkin Truffle Eyeballs – The Stay At Home Chef

Halloween just got a whole lot tastier with these Pumpkin Truffle Eyeballs! These festive treats combine the best of spooky and sweet, featuring a delicious pumpkin-flavored truffle that’s loaded with warm fall spices. Each truffle is decorated to look like a creepy eyeball which makes them the perfect addition to any Halloween party spread. These truffles are as easy as they are fun to make.

These Pumpkin Truffle Eyeballs stay on the cute side of spooky, so you’re not fully entering the haunted house of treats. With just 15 minutes of prep, you can pop them in the fridge and enjoy some downtime (or a Halloween movie) while they chill. After that, it’s just a quick dip in melted white chocolate and a bit of decorating with M&M’s and red icing to create the perfect “eyeball” effect.

Ingredient Notes

  • Graham Crackers: 10 full graham crackers, just toss ’em into the food processor whole. This is approximately 1 sleeve of graham crackers.
  • Pumpkin Puree: Not the same as pumpkin pie filling – this is canned pumpkin with no other ingredients added.
  • Cream Cheese: 1 block, softened. You can also use a low-fat cream cheese.
  • Spices: Cinnamon, ground ginger, nutmeg, and ground cloves are the foundation of a pumpkin pie spice blend.
  • White Chocolate Chips: Melt the chocolate chips right before you start dipping your truffles. You can also use white chocolate melting wafers, which tend to melt more smoothly.
  • M&M’s: Use a variety of colors for the “eyeballs,” or stick to classic brown for a more realistic look. If you want to mix it up, candy eyeballs are a fun substitution too.
  • Decorating Gel/Writing Gel: These are small tubes of decorating icing with a gel consistency. This is NOT food coloring so be careful not to confuse the two. They’re easy to find in the baking section of most craft or grocery stores.

Drawing on the Pupil

You can use Black Decorating Gel to color a pupil in the middle of the M&M candy. But don’t stress if you can’t find one, they’ll still look like candy eyeballs. Edible Food Coloring Markers are another option that you can find in the baking aisle near the decorating supplies of craft stores, and it’s super easy to use with more precision. If you prefer, you can also use melted dark chocolate and a toothpick for a more homemade option.

Melting the chocolate chips

Melting chocolate is actually super easy, but can go from silky smooth to clumpy burnt in literally seconds. When melting chocolate in a microwave you should only microwave for 10 to 15 seconds at a time. Stir the chocolate chips with a rubber spatula, scrape the sides of the bowl, and then repeat heating and stirring until the chocolate is mostly melted. When there are only a couple of little lumps left, then keep stirring until the chocolate is smooth (the heat from the already melted chocolate should be enough to melt those little lumps completely).

If your chocolate begins to harden as you’re dipping your truffles, just pop the bowl of chocolate back in the microwave for 10 seconds, then stir, and keep on dipping.

Storage and Reheating Instructions

Refrigerate leftovers in an airtight container for up to 5 days.

Freeze truffles in an airtight container in a single layer. Thaw in the refrigerator overnight.
